Am I the only one who has noticed that European/European-Decent people look more like the characters in anime than actual Japanese people? Why do they draw them to look like that?

It's readily apparent in the live-action parody, which I laughed at; especially the cardboard eva. :)

You've noticed it, because that's what you want to see. Most people who agree with you, point to three things, hair color, eye size, and skin tone.  No one has naturally green hair. No one has eyes that are actually that big in relation to their head. And the Japanese have the same range of skin tones that white people do, if not more. However if you DO look at the shape of the face, it's shaped more like a Japanese face (smoother contours) than a western face (which has more geometry).

It's not over-analysis, you have to figure out what it is you're looking at that makes you think "Caucasian person" or "Asian person". Term papers have been written on the subject, most of the ones I've found are written by white people that think Japanese people have some sort of desire to be Caucasian, and use anime as a vessel to express this desire. It's a very egotistical, archaic, and euro-centric stance to take. I'm not saying you feel that way, but your notion is still ridiculous.
