Thank you for the comments. To get those camera angles, you have to choose the replay function that changes the angle with the music. You can then turn the music off, open the disc tray, and change angles with the X button. The camera angle will stay until you hit X again. It can take a while to get the camera angle you want for a particular section, as the camera angle chosen is random.
