I agree that it looks fake. I have never shot a watermelon, but I have shot dozens of equal sized pumpkins. Never has any melon exploded with such extreme force. The faster the bullet, the less it seems the object is disturbed. I've shot pumpkins with 5.56mm (3100fps) my 30-06 (2300fps) my .40 and 9mm and even my shotgun with a 1oz slug. The slower rounds always left a mess. A .50 BMG (not action express) I could imagine doing damage like that, but who knows - and the round was smaller.
