@jef46614 Hi, I did not pound the meat, I just asked the butcher to slice the chicken breast thin. If you prefer you can pound it I think it would make sense as well if you buy the whole chicken breast.
Now I get it! You add the fluids, (wine and broth), and the extra cooking time doesn't turn the cutlets into inserts for my boots, (as my wife puts it). Thanks for that...you just saved the edibility of future chicken cutlets in my kitchen ;)

It looks like you pounded the meat flat. I usually do this with chicken to tenderize it. Is that what you did here?
