Hi. This is a very simple recipe. Is there a reason why you keep referring to them as vegetarian when they, from what I can gather, have no animal products? So really aren't they vegan?
This is a delicious recipe! I was a little skeptical because it's vegan (and I'm an omnivore). It was easy to make, despite its tons of ingredients. I don't have a steamer so I wrapped the links in ungreased foil and baked them at 350 deg Fahrenheit for 30 minutes. They turned out great.
I couldn't find smoked paprika so I mashed 1.5 teaspoons of Chipotle pepper in Adobo sauce (comes in a can). Added extra spice and smokey flavor. Wheat meat is neat :)
@Musashi242 No it doesn't. Meat doesn't have special nutrients that plant foods don't. That seitan she is making is full of protein and the vital wheat gluten contains B12. No, not all vegans and vegetarians look ugly. Thank you very much for the ignorant comment.
@everydaydish there's another blog by a guy named "Vegan Dad", and in the comments for his recipe for homemade sausage - from 2008- in the comments, i think that someone made a suggestion for an alternative to gluten flour. hope that helps. :-)

Are the smoked paprika and regular paprika you use sweet or hot? I live in Europe, and it may be hard to find some of the ingredients (like the vegan "chicken" broth and chickpea flour). I know I can find smoked paprika on eBay. Which is best for this recipe? Also, I don't have a steamer. Is it okay to boil the sausages like regular seitan?
@RomanDonna erm Chickpea flour is known as Gram flour in the UK and is available from any indian/pakistani/bengali/or north african supllier, and many larger supermarkets, I guess this would apply other european countries... I know Gluten is hard to come by in britain but really common place in spain.
I don`t know what am I doing wrong, but it becomes as chewing gum. I tried to put more chick peas flour, but it came only harder and same gummy. I don`t use yeast, instead add more flour. Could anyone help me, because I bought 25kg of gluten and don`t know what to do with it :(
@ezopas777 I think the issue might be that you're adding more flour instead of the nutritional yeast. Nutritional yeast is there for flavour and nutrients, and acts completely differently than regular rising yeast. If you're adding chickpea flour (not gluten flour), then maybe you should use less than the amount of yeast? I hope that helps :)
I absolutely love this recipe. I have one question.Why is it that in other recipes I see ppl 'washing' their ball of dough? What does that do & what made u opt not to do the same? Thank you kindly for sharing such a gem of a recipe.
@LovedByMeBeautifully The washing process is only necessary if you use regular wheat flour to make seitan. The washing removes the starch, leaving only the gluten. If you use gluten flour directly, there's no need for that step, since it's already just gluten. So all you have to do is mix.

Because Vegetarian sounds like vegetables, we want to use a different word to describe a "non-meat eating person". Vegetation are things grown that are plants. You can not confuse one word and give it many meanings. You do not eat vegetation if you eat cheese or eggs. It is, "I do not eat meat". Sure I understand that sometimes in life we use one similar word to describe a set meaning. However this is not one of the case.
Unfortunately I have a problem with this recipe and seitan in general. My raw seitan dough is very elastic. It sticks together and has the texture of chewing gum. It is impossible to shape the dough...Do you know what I did wrong or do you have any tips?
If I am not going to use all the sausages at once is it better to roll them in foil un-steamed and throw them in the fridge or to prepare them and then to store them?
@ClonedTyranny I made the sausages 2 weeks ago and i had about 6 left over and last night i took them out my freezer and heated them in my micowave. Taste exactly the same after those 2 weeks of being frozen. That's the good thing about vegan cooking, it can stay fresh alot longer than animal food products. But yeah this rcipe is yummy i have it with Pasta :)
@08paul83 the seasonings used are what is referred to as an italian sausage by americans, not necessarily that the sausage or recipe necessarily came from italy
Some fish bait stores sell it, but it is not intended for human consumption - not because it is produced any differently, but because it isn't stored according to H&S regulations. Flourbin were fine for me and delivered promptly.

We are going to a festival and wanted to make grilled sausages. Several people have various dietary limits; no pork, no beef, no dairy, vegetarian. I tried these and they were very easy to make and definitely taste better than the store bought veggie sausages. I could not find the Bill's Chic'nish so I substituted a veggie chicken broth powder. Next time I am going to try using Penzy's Italian or breakfast Sausage spice. Thanks for sharing the recipe.

CAN I JUST SAY, I just made these sausages today... and I was always tempted to try them but I had trouble finding nutritional yeast flakes, so instead I thought I would just make the recipe without them..and let me tell you they turned out GREAT and the taste is AMAZING! A LOT BETTER than the vegetarian sausages from morning star haha..i was thinking maybe putting them in jambalaya or something ;)
but id rather not attribute to something i personally dont believe in. To many cows are being made to supply most fast food eateries with their patty's the cows are causing a lot of harm to the environment with the insane amount of methane they produce and im not for the unethical consumption of animals. I think to sum all that up is to say i believe that the world should think more on how early native Americans would think, to never have more then what we need to survive.
quick fact for u, the methane issue is due to concentrated large number of cows closely together, fed corn (which is bad for cows but cheap to manufacture) and shitting on eachother. this lifestyle is unhealthy for cows. grass fed cows eat their food (its fuckin grass.. that gives u an idea how greedy the food industry is) and fertalize their own food supply. beef is wonderful but people are blind to the power establishment in this country. u dont always have to stop eating meat to stay healthy.

Discovered Julie's recipe 2nd or 3rd hand. I substituted generous amounts of sauted mirepoix (2 p onion:1 p carrot:1 p celery, sold in southern grocery freezers) chilled in veggie broth for the faux chicken boulion and onion granules, and added some dried sweet peppers for additional texture/visual interest, and they still came out well.
Beware that these don't have casings or much fat, so they don't hold up well in stovetop pan browning. Thaw and briefly grill or stir-fry in dishes worked.
The dry ingredients can be found in health-food store bulk sections, eg. gluten for $2.60/lb, and for any adventurous cook, its good to know your local Asian markets (produce and soy sauces cost less than half of most grocery stores).
Tamari is just soy sauce richer in umani (savory / free glutamate) taste. It keeps for several years and can be purchased by the gallon.
Silverbud, because some of us converted to vegos after eating meat all our lives, so it's only natural to occasionally crave the taste of meat. Also means we can cook the exact same dishes we used to using the substitute products, which makes it a lot easier for people to convert.
Also, I can admit I liked the taste of most meats, though I would never eat it again, so there is harm in eating these products which means I never actually crave meat, I crave these products instead.
For some, it is psychological--but if you're craving an exact replacement for meat then maybe you should rethink your reasons for becoming vegetarian, particularly if it was for "humane" reasons.
However, I don't think it's wrong to make, for example, a mushroom veggie pattie-it's cheap, you can eat it like a burger but at the same time, it has unique taste and texture, quite unlike beef burgers.
Because meat taste good, but I DON'T want to eat it for various reasons. It's psychological too. We were raised (Western Civilization) to eat meat with every meal. It is hard to break that cultural influence. So when someone becomes vegetarian/vegan they attempt to keep the cultural norm but with substitutes.

You can extract vital wheat gluten from regular whole wheat flour by adding water to the whole wheat flour and then kneading it under water, The water soluable starch will wash away leaving th insoluable gluten . . . but its a mess, If you can get the gluten flour in the store it is much easier.

I don't think Vegetarian is the right word. Vegetarian is associated with vegetables. Vegetarians also eat Fruits and other things.

If I am not going to use all the sausages at once is it better to roll them in foil un-steamed and throw them in the fridge or to prepare them and then to store them?

@ClonedTyranny I made the sausages 2 weeks ago and i had about 6 left over and last night i took them out my freezer and heated them in my micowave. Taste exactly the same after those 2 weeks of being frozen. That's the good thing about vegan cooking, it can stay fresh alot longer than animal food products. But yeah this rcipe is yummy i have it with Pasta :)

Some fish bait stores sell it, but it is not intended for human consumption - not because it is produced any differently, but because it isn't stored according to H&S regulations. Flourbin were fine for me and delivered promptly.

I had no issue with flourbin, just found their shipping to be a bit high.
i did some more digging and found lowcarbmegastore had 1kg for £7.75 inc shipping.
its £2.80 per kg and £4.95 shipping
Just a shame it costs so much to get it to your door compared to the price of the flour!
I'm also gonna ask the local baker if they have it, might be a much cheaper way fo getting it.

I went there and went into the 2008 videos and found it but when I clicked on the ingredients it came up page not found but gave a list of other pages of edtv. We are going to a festival and wanted to make grilled sausages. Several people have various dietary limits; no pork, no beef, no dairy, vegetarian. I tried these and they were very easy to make and definitely taste better than the store bought veggie sausages. I could not find the Bill's Chic'nish so I substituted a veggie chicken broth powder. Next time I am going to try using Penzy's Italian or breakfast Sausage spice. Thanks for sharing the recipe.

CAN I JUST SAY, I just made these sausages today... and I was always tempted to try them but I had trouble finding nutritional yeast flakes, so instead I thought I would just make the recipe without them..and let me tell you they turned out GREAT and the taste is AMAZING! A LOT BETTER than the vegetarian sausages from morning star haha..i was thinking maybe putting them in jambalaya or something ;)

but id rather not attribute to something i personally dont believe in. To many cows are being made to supply most fast food eateries with their patty's the cows are causing a lot of harm to the environment with the insane amount of methane they produce and im not for the unethical consumption of animals. I think to sum all that up is to say i believe that the world should think more on how early native Americans would think, to never have more then what we need to survive.

quick fact for u, the methane issue is due to concentrated large number of cows closely together, fed corn (which is bad for cows but cheap to manufacture) and shitting on eachother. this lifestyle is unhealthy for cows. grass fed cows eat their food (its fuckin grass.. that gives u an idea how greedy the food industry is) and fertalize their own food supply. beef is wonderful but people are blind to the power establishment in this country. u dont always have to stop eating meat to stay healthy.

The spice comes from the dried chili flakes and lots of ground black pepper. Not totally spicy but spicy for some.

Discovered Julie's recipe 2nd or 3rd hand. I substituted generous amounts of sauted mirepoix (2 p onion:1 p carrot:1 p celery, sold in southern grocery freezers) chilled in veggie broth for the faux chicken boulion and onion granules, and added some dried sweet peppers for additional texture/visual interest, and they still came out well.
Beware that these don't have casings or much fat, so they don't hold up well in stovetop pan browning. Thaw and briefly grill or stir-fry in dishes worked.

Vegan diets are easier in large cities.
The dry ingredients can be found in health-food store bulk sections, eg. gluten for $2.60/lb, and for any adventurous cook, its good to know your local Asian markets (produce and soy sauces cost less than half of most grocery stores).
Tamari is just soy sauce richer in umani (savory / free glutamate) taste. It keeps for several years and can be purchased by the gallon.

Silverbud, because some of us converted to vegos after eating meat all our lives, so it's only natural to occasionally crave the taste of meat. Also means we can cook the exact same dishes we used to using the substitute products, which makes it a lot easier for people to convert.
Also, I can admit I liked the taste of most meats, though I would never eat it again, so there is harm in eating these products which means I never actually crave meat, I crave these products instead.

For some, it is psychological--but if you're craving an exact replacement for meat then maybe you should rethink your reasons for becoming vegetarian, particularly if it was for "humane" reasons.
However, I don't think it's wrong to make, for example, a mushroom veggie pattie-it's cheap, you can eat it like a burger but at the same time, it has unique taste and texture, quite unlike beef burgers.

Because meat taste good, but I DON'T want to eat it for various reasons. It's psychological too. We were raised (Western Civilization) to eat meat with every meal. It is hard to break that cultural influence. So when someone becomes vegetarian/vegan they attempt to keep the cultural norm but with substitutes.

You can extract vital wheat gluten from regular whole wheat flour by adding water to the whole wheat flour and then kneading it under water, The water soluable starch will wash away leaving th insoluable gluten . . . but its a mess, If you can get the gluten flour in the store it is much easier.
