I prefer to get all the turtles but that one on the switches. (I bypass the gate using the ladder) I then open the gate and rush to where the baby turtles should end up and I'm looking down in 1st person mode...waiting. When I see them I think "Here they come! Get ready!"

In the exact words of RedDevilDazzy himself: What you need to do is wait next to the Turtle, and just as the Baby Turtles are jumping over him, charge the Turtle, this will see him jump up really high!
