salting all foods after cooking is not a good idea. sometimes the flavor is different if you salt things later. if people do not consume salt, then they can simply omit it. most people eat salt, so chef mary is teaching the correct way.
I'd have to disagree with your comment regarding the salt if and when a host is inviting guests. As well in many restaurants salt is rarely used during the cooking process. If it is used, then it is mentioned from the sale point. Like in my case owner of a restaurant, I don't use salt except at the table. Otherwise, you are correct if cooking for yourself or the family.
So, I think that chef Mary method is (cooking for yourself and not guests) to some degree.
Is there a reason why you salted the scales of the fish (which will be discarded) and not the fish itself? Shouldn't you salt and pepper both sides? Thanks for your input.

@sirmau you're an idiot, look at any good chef and you'll see they always season meat or fish with salt BEFORE cooking it, not afterwards
