Great tip freezing your bacon. I always hate cutting it when it's room temp. I tried to make cheese beer soup one time, and boy was it icky. I will definitely be trying this with the specialty cheddar.

I made this w/o the bacon as I do not like the flavor bacon gives in these types of recipes. If you like bacon in that way, go for it. If your bacon is not partly frozen, another way to cut it is to use kitchen shears.
I know some of you foodies are going to scream, but I used a regular block of cheddar. I did this out of pure curiosity and the soup came out great.
@liarsclub75 (cont) I used Sam Adams Winter Lager which was not quite as pale as I thought it would be, but it worked out great. I topped the soup with the chive oil and served it with homemade onion rolls.
Being that this is a very decadent dish, I would definitely splurge for the better cheese, but it can be done with regular supermarket cheddar. I forgot to season with salt and pepper at the end, but it was still very tasty.
We have a specialty cheese shop near by where we get hand crafted cheeses. If you don't have something like that close by, I am sure there are a lot of places on the internet that would ship....

@Sploog321 most of it does. if you want to get down to it, alcohol evaporates at 173°F (very low). if you really want to get down to it, you could take the ABV (alcohol by volume) of the beer and calculate the time a beer would take to evaporate at medium heat. estimate medium heat how you will; it is well over 173°F. then you would have the time needed for all the alcohol to evaporate.
or you could do like my family and figure that the amount of alcohol left in cooked food is negligible.

question. wouldnt adding flour straight into grease/hot liquids form chunks? i always though a roux needs to be mixed with room temp stock/water first? maybe i just wasnt listening in class...

This is almost exactly like the cheese soup from Good Eats. There are a few major differences like the type of cheese and stuff, but otherwise it's pretty much the same.
