She really does defy gravity in this scene... a brony calculated that to do what she does at 0:40 she'd be under around 1670 Gs. Most modern (human) pilots can endure around 10 Gs with a special suit. In other words, Rainbow Dash laughs at your silly gravity.

You could be in zero gravity, in a vacuum, with no gravity, and still feel those "Gs" because the "force" you feel if your change in momentum. When your momentum changes so drastically in such short a time, due to a massive acceleration, the impulse you feel is immense. Therefore, Rainbow isn't defying anything, other than the average philly's ability to withstand immense "Gs".
