The video needs a better description; what you're seeing is how badly Matt C. from IGN is at putting together a musical arrangement. He played the game this horrendously, then bashed it in his review. If, however, you check out the video that this is a response to, you'll see JC from Nintendo take these same instruments and actually turn it into an interesting rendition of the song.

You play one instrument at a time, but as you play all of your previous "recordings" for that session play along with you - or the Tutes play with you if you haven't recorded anything yet. You can also remove the Tutes and start from scratch so that they don't influence you too much. :)
