It's much easier to just GRATE the ginger instead if slicing it.
That way, you only need a very slight amount of ginger to make a strong flavor (so you're saving a LOT of the ginger for later use), and the tea is ready much, much faster. Trust me, this is much more sensible. I use the smallest grate units personally.

ive been curing myself with teas for my cold instead of taking medicine, first i had ginger and garlic tea for a day, then just went to straight ginger teas, and taking honey as you would a cough syrup, and tbh im getting better faster than when i rely on cold and flu medicine..natural healing is the way to go :)

Your knife skills make me cringe. Just kidding. But the easiest way to peel ginger is with a spoon. Also, lemon zest is a great addition. Don't actually zest the lemon but peel the skin with a potato peeler. Try to not get any of the pith (the white part), it's bitter.

I like to add, fresh ginger, half a fresh chilli, honey and a star anise, leave it for 10 minutes to infuse.
