Was it difficult putting the back plate on with all those wires just hanging out

Not at all. The tie downs and anchors really pull the wires and cables down from sticking out.

Help!

I have a question..How many of those cooler fan ports must you have on your motherboard to run al this fans in the Antec Twelve Hundred (do not count the cpu cooler port)

The fans don't have a mobo connection, only molex. The total would be the amount of fans, 6. All of these have male/female ends so you can hook up all the fans together and be powered by only 1 molex connector

Did you need to buy an adapter to connect the 24 pin connector to the motherboard? And do you have to sleeve?

Well I had to buy an extension for the 24 pin and it came sleeved when I bought it. No need for an adapters.
