I am also cuban, I have to admit that you made me smile my only suggestion is that you slow down the talking a bit or pronunciate a little better only because at times it sounded like you where mumbling or running your sentences together. I did love the little dance for the chorizo, but the dish was not cuban. Yes we have a version of this spanish dish but this is not it.. You probably where trying to get abunch into a small time frame but just remember that both cubans and spaniards pride them-
I'm cuban and have to give it to you for your energy! I auditioned, too!! didn't make it this year, but did last year all the way through! Booo... but why is this a Cuban paella?? keep it movin'! :)
Good luck with the auditions for the show. I visited your website and it looks like you definitely have what it takes to make it big.
Of course, I am not Cuban, but I did find the recipe on a Cuban site. You have to tell me if it is authentic or not ;-). I used Chorizo as a base and sauteed the other proteins in it. It adds mad flavor to the dish along with the Saffron.
Please hit me up on Facebook under Chef Eric Paul so we can keep connected.
selves on taking sweet their time and putting nothing but love in their food, and that my friend is what makes their traditional food sooooo good.
P.S
Paella is not always spicey
