I use Quicktime. There is an option within the program to "open an image sequence" and it automatically collates the photos into a movie. You can choose the frame rate too.
this video would go really well with Chicanes new song, Poppiholla. i only say this because i had it playing on my TV at the same time and it fitted well!

I was using a Canon 20D with a 50mm lens.
I agree that I held many of the shots for too long.
I am in the process of making another time lapse so keep watching.
