  • I want your cookbook where do we buy it?

  • This is amazing....I use a butter substitute and it works great!

  • Is there anything non-diary I can substitute for the butter? I'm highly lactose intolerant, so unfortunately, even in cooking, dairy can be a problem for me. I hope there is, because these look ridiculous good.

  • Thanks so much for this delish tip for acorn squash :) Wanted to share a little tip with you- I had some glaze leftover in the pan and was hungry, waitiing for my squash to bake...I sliced some bananas up and lightly cooked them...DELISH!!!

  • Doing this now. I'm adding a splash of bourbon to the glaze.

  • I just made this for my mom. she loves squash. I dont. but I cant deny. i ate half a slice. and it was fu***ing delicious. thnks for the upload.

  • cut squash in half. in micro-safe dish, place 1/2 upside down in 1/4 " of water. micro for 8 min. place slim tab of butter in squash cavity, add kosher salt and brown sugar. place in 400 oven for 4 min until sugar carmelizes. any more time/effort with this vegetable isn't necessary.

  • -drool-

  • hey john were can i get one for your cook books?

  • Simple and very delious. Thank-you.

  • splenda an butter an it was yummie

  • Can this recipe also be used for butternut squash?

  • I just baked my first acorn squash using this recipe, and it was delicious! I didn't even know if I could eat the skin, and I ended up eating it too anyway just because it was so good. Hopefully acorn squash skin isn't poison.

  • I love this man, lol

  • do you eat it all or leave out the outside shell part

  • Looks Good

  • I'm going to have to start attaching videos to your page after preparing your dishes, cause my family is always happy! Good luck w/the cookbook, keep everyone posted so we can pick up one! Oh, and I'm making this recipe right now! I love Cayenne Pepper!

  • I just use butter and salt. Tis delicious.

  • mmm... I love squash! I posted a video of a healthy vegan maple-dijon glaze I do over carrots & parsnips, but would also be great over some acorn squash! Thanks!

  • Chef John is a baller.

  • Ooow you are simply oooozing with charm hehe .. Our Gordon Ramsy could learn a lot from you :O)

  • i love you and your recipes. You're fantastic, love the commentary!

  • oh god yum

  • haha I fell in love in love with those squashes too!! You're such a great host even if we don't really get to see your face, you have the perfect voice for that.

  • my mom likes to put condense milk and butter in squash, it makes kind of a sweet custard like stuff at the base of the squash.

  • I'd be one of the first people to get your cook book too chef John. Cheers!

  • Cook book?? Where do I get the cook book? I want the cook book! Give me the cook book!!

  • maybe you could have went an extra mile and put some sort of filling into the shell? optional of course

  • <3 ty

  • I tried this recipe last night and it was yummy!

  • looks great! gonna try it..yummy

  • I definitely get the book if he made one

  • most people dont like vegies because they dont know how to make it delicious or cook it properly.

i had a high school girl who hates vegies but she likes the vegies i made.

and when you are in america, most vegies are prepared like salads, steamed or grilled, and just not much else to it. parents always wonder why their kids dont like vegies, well, they should look at what they prepared for them first.

  • Do you ever reply to any of the comments?

  • it looks like a cooked turtle :O

  • u bitch thats so mean!!!!!! =(

  • o rly who is the one calling some 1 a bi!@

  • lol. =P i keep thinking it says bacon squash

  • ok...?

  • whqat can you do with the clear liguide that you scoop out before adding the glaze?

  • That's okay, I hate when chefs eat on cam.

  • Wow!! This looks so delicious!! Thx.

  • I have never taster a squash, but this video makes my mouth wather

  • I've made something very similar in the past and it was extremely good. You had my mouth watering as soon as you mixed up the glaze. Never had the idea to cut grooves on the inside to let the glaze flow better, or the orange juice. The last time I made them it was with butter and brown sugar and they were definitely decadent.

I agree with the thing about people not liking veggies if they aren't properly salted. I love my veggies with a good helping of meat to go along.

  • Squash is my favorite :)

I never would have thought maple syrup, brown sugar and cayenne pepper would go well together.

I guess I'll have to try it now!

  • oh my goodnessss!! this looks mouth watering

  • Yummy!

  • make meatloaf

  • He already did.

  • Lol, one of my many theories I can't prove

  • Do you have a TV show? Why not,. or a segment somewhere? Someone call Oprah for Pete's sake.

  • FOOD PORN! YAY!

  • YAY! I can't wait for the cookbook.

  • Chef John ! Can you show us how properly prepare: Cajun Prime Ribeye ? I've eaten this dish at a restaurant and they've taken it off the menu ! I've attempted many times to do it myself, but I can't seem to get it right. The top glaze on it was perfectly cajun-y and slightly crisp while the center was tender. Something like that and my cooking terms aren't that great, but thanks in advance if you decide to do a how-to vid !

  • I suggest you watch his Method X ribeye video and just slather on some cajun spices beforehand. Should work loverly.

  • hi chef, can u please show how to make nice black forest cake..pleeeeeeeeeeeeeeeeeeeeazzzzzzzz..

  • How are you going to eat this?

  • the answer's at 2:57

  • ya!

  • What would you serve this with? I'm eating vegetarian, so I'm hoping for non-meat suggestions.

  • Roast squash goes great with steamed brown rice, grilled or roasted brocolli/asparagus and a big salad. You almost don't even miss the meat. Almost.

  • Thank you. It does sound good.

  • 1) what does squash actually taste like (i never had it)

    2) Pre-heated is wrong. There are only two states an oven can exist in. Heated or unheated. Pre-heated is a meaningless term.

    3) Will the cookbook be available in england?

  • @jakamneziak #2 Ya got him... *sarcasm*

  • 1)Squash has a fairly mild, somewhat "Nutty/sweet" flavour. I like mine with a bit of butter and garlic salt & pepper 2) Pre-heated isn't a meaningless term. One can put the food in and then turn on the oven Some recipes call for exactly that. If a recipe calls for the oven to pre-heated to 425 deg. then one must heat the oven in advance of inserting the food. Thus it has been "Pre-Heated" 3)If you find fault with most fundamental terminology why buy one of Chef Johns books? Cheers/ Rat

  • he's not jewish, he's cooked pork before, hasn't he?

  • @theeSHXT Not yewish he has made a lot of pork meals (:

  • COOKBOOK???!! When is that coming out? I can't wait to get my hands on it!

  • thank u

  • I love acorn squash! But for some reason have forgotten about making it for a long time. I used to just throw some brown sugar and butter in the middle, but this seems like a much better way of doing it. I guess that's why you're the Chef and I'm not :)

  • Chef John, you rock !

  • Does it matter if he is jewish or not?

  • Why?

  • can u eat the seeds seperate or chuck? :)

  • Please can you let me know what is the name of your book so that I can get someone to send it to me in Italy. Ty

  • i've never tried to cook any of this, but it's just so entertaining to watch. My goal is to try all of them!

  • DUDE! when's the book coming out??? My huband and I are massive fans, love all your videos :-) And this sounds wonderful, we're always struggling for nice appetising things to make for our veggie friend, I know, so lame, but we're avid carnivores, but this looks super yummy thankyou!

  • I wouldn't be surprised if Chef John put cayenne in his morning coffee and oatmeal.

  • @txsphere I bet he does!

  • PS. what would go nicely inside those, if one was to use it as a bowl... perhaps salmon with a maple glaze? what do you recommend?

  • great cook

  • Nice, but umm I wonder how that taste like.

    Pumpkin pie?

  • amazing

  • COOK BOOK!?!?!

  • You're making a cook book? I'll be first in line for that! :D Can't wait!

    Love your vids Chef John!

  • How do you eat it?

  • @itsdalena with a spoon

  • your videos are the BEST!!! Thank you :D

  • Mmm!

  • luv ur vids!

  • hairy hands

  • lol

  • looks delicious chef john! i have just been nuts about squash lately - i really love the natural flavor and texture of kabocha squash but there aren't many recipes online for this! any good recommendations for a healthy dish using kabocha? :) thanks :)

  • This is similar to what I've done in the past.

However, I think that the scoring might take them from good to great.

As always, thanks for the tip!

  • I just did this two days ago, did the cubed knife mark and the maple sirup !!! however , I used butternut squash.....was so yummy. Will try acorn next time.

  • I love squash.

  • Woah!

  • mmmmmmmmmmm

  • Chef John, O my Gosh. You have created great squash! :D

  • I agree with your theory of people who don't like vegetables. Either they've only had them not properly salted, or overcooked... or both.

Bit of cinnamon goes great on roasted butternut squash also. :)

  • Or allspice. Heck yes!

  • oh yum!

  • Maybe that's what he tells you so he could have more.......

  • Your Grandfather never had Summer squash grilled with butter & Hawaiian (red-clay) Sea Salt! He would change his mind at my BBQ. :D Try It!

  • Your grandfather was a prig.

    More for us.

    MOAR I say!

  • looks really yummy :]

  • Looks really tasty!

  • looks good!

  • 5th :D

  • great recipe!

  • i never heard of it, but that stuff looks good

  • Looks delicious, as always.
