Is there anything non-diary I can substitute for the butter? I'm highly lactose intolerant, so unfortunately, even in cooking, dairy can be a problem for me. I hope there is, because these look ridiculous good.
Thanks so much for this delish tip for acorn squash :) Wanted to share a little tip with you- I had some glaze leftover in the pan and was hungry, waitiing for my squash to bake...I sliced some bananas up and lightly cooked them...DELISH!!!
cut squash in half. in micro-safe dish, place 1/2 upside down in 1/4 " of water. micro for 8 min. place slim tab of butter in squash cavity, add kosher salt and brown sugar. place in 400 oven for 4 min until sugar carmelizes. any more time/effort with this vegetable isn't necessary.
I just baked my first acorn squash using this recipe, and it was delicious! I didn't even know if I could eat the skin, and I ended up eating it too anyway just because it was so good. Hopefully acorn squash skin isn't poison.

1)Squash has a fairly mild, somewhat "Nutty/sweet" flavour. I like mine with a bit of butter and garlic salt & pepper 2) Pre-heated isn't a meaningless term. One can put the food in and then turn on the oven Some recipes call for exactly that. If a recipe calls for the oven to pre-heated to 425 deg. then one must heat the oven in advance of inserting the food. Thus it has been "Pre-Heated" 3)If you find fault with most fundamental terminology why buy one of Chef Johns books? Cheers/ Rat
I love acorn squash! But for some reason have forgotten about making it for a long time. I used to just throw some brown sugar and butter in the middle, but this seems like a much better way of doing it. I guess that's why you're the Chef and I'm not :)

I've made something very similar in the past and it was extremely good. You had my mouth watering as soon as you mixed up the glaze. Never had the idea to cut grooves on the inside to let the glaze flow better, or the orange juice. The last time I made them it was with butter and brown sugar and they were definitely decadent.

Roast squash goes great with steamed brown rice, grilled or roasted brocolli/asparagus and a big salad. You almost don't even miss the meat. Almost.

2) Pre-heated is wrong. There are only two states an oven can exist in. Heated or unheated. Pre-heated is a meaningless term.
