couldn't this reinterpretation of korean food be considered a diviation of what real korean food is? if the main objective of this competition was to make korean food more apealing on an international level by changing the traditional and original korean recipe to adjust to foreign tastes then to what extent could you still call it korean food? Although I think innovation and creativity are great in the kitchen I'm dissapointed that there's pressure to "reinvent" a cuisine that's already good.
i'm in the middle of Midwest USA,Minneapolis MN,and there are two very good Korean restaurants just a short drive away.the Mirror of Korea is our favorite.i like the small dishes that go along with the main meal.the food is great and the real thing as it's busy with Korean students from the local universities.my family was from Scotland so it's not like i'm enjoying "home cooking"
So glad Korean cuisine is globalizing. It's about time. Korean food is an acquired taste, it's hearty, robust and could be spicy but the fact that we're able to take the ingredients and transform them into more edible fusion like dishes I think is wonderful. I love Korean food...
