I thought the problem with cooking with olive oil, is that the heat breaks up the monounsaturated fats, and the even more delicate omega-3/6 polyunsaturated bonds.
After all, Olive oil already has antioxidants, polyphenols hydroxytyrosol (HT), hydroxytyrosol acetate (HT-AC), phenolic acids Oleocanthal , oleuropein, cafeic etc...
Is using refined and/or adding more antioxidants somehow raise it's low smoke point?
I think I'll stick with Coconut and Macadamia nut oil for cooking.
Would it be a wise thing to do to put several drops of Lutein or Astaxanthin? And I take it after the coloring from anti-oxidants disappear, the oil is already rancid?

The 3 liter metal canisters I buy it in keeps the EVO protected from light and in excellent condition. The oil hasn't ever gone rancid on me using this larger size.
@dawes777 no myth destroyed, olive oil is a super food, olive oil is packed with natural anti oxidants some of them are 40 times stronger than catechins.
We drink it from the bottle in Provence, Greece, Crete....
All the elder sware by it, for their salad dressing, and even to put on their skin.
It is a more than healthy oil ! And cheap when we are lucky we get 1 liter of organic extra virgin olive oil for 5 euros.
