Chickens are not a realistic test and anyhow they can't fly high enough to get into a jet engine. Canada geese or swans would be a more realistic test. Its not done of course because such big birds are likely to trash the engine.

The chickens are packed in a polystyrene cover and it is this that you can see peeling away from the chicken. It is basically the same principle as a 'sabot' round of artillery.
