The chickens are packed in a polystyrene cover and it is this that you can see peeling away from the chicken. It is basically the same principle as a 'sabot' round of artillery.
It seems that they're already blown into little bits before they even hit the engine. They should use something less destructive to the ammo like a water balloon slingshot. Cool video though.
This is actually how they train special forces chickens.
