the function of the stator is to stabilize the F1-domain (the ATP-building part) in a fixed relative position to the Fo-part (the rotating proton engine).

without a stator, the F1-domain would rotate along with the axle.

with the stator, the F1-domain is fixed, doesnt rotate and can produce ATP: 2:50 .
