Probably Legal Reasons, I know GOG is signing on new publishers (three out of these, EA, 2k (who owns the legal rights to X-Com), Square Enix, Lucas arts, and Microsoft, they already have one of them, but they seem to be making progress with two others, we have no idea whom though...)

Your starting soldiers will be the best you can get, the rest are useful as cannon fodder... Until you get them through a few missions, then the fodder separates from the good ones.

I believe it affects the stats of the aliens you face, i.e. their accuracy and health, as well as scaling up the number of UFOs on the Geoscape. I don't think you'd see many UFOs at all over Antarctica on Beginner.

Basically, the higher the difficulty, the higher the stats are in general, the more aliens you'll encounter and the more aggressive they are.

It doesn't matter much that it's on super human - due to a flaw in the game code, the difficulty goes to the easiest level after the first day. It's still plenty difficult :)
