well i made my own infection game and the last man standing gets infinate ammo and instant kills. but i only use that mode on xbox live when i host games.
Not to brag (it's really just luck and my brother's excellent marksmenship) but I'm usually the last man and it does suck, especually if you run low on ammo...

Most of the matchmaking infection matches are in Rumble Pit, so try that.
Another way is to make a party, go into Custom Games, and then play Infection.
