May be 1day our gr8 chef will show us how to make healthy Asian food so that our elders and next generation can live healthier and still enjoy the gr8 taste of our food. Cooking in the oven or grilling instead of frying can help. (we have all heard of oven chips?) :)

But the best thing about the Indian food is we can make it healthy without compromising on the taste. i am 21 now bt i have been making puris for my family for five to six years now.but after seeing u making them i realized y my oil used to get darker after making them..coz i used to shuffle my puris while rolling in flour.now this is a very gud tip.thanx
To me, the best technique for puffing puris is to poor and splash hot oil/ghi on top of them with the spoon, because if I press it or handle it any way with a spoon, I may crack the bubble if it's at all brittle, and all the steam would get out.
i was born in dubai and we loved this restaurant sadhana it was our ritual on friday mornings to have poori bhaji for breakfast it is still for my brothers and mom.i miss it as i am now in florida but i would really liv to know the recipe of aloo bhaji and i have tried ur recipes they are amazing thankyou

Wow, we've been eating pooris for decades and didn't even know it! We just call it fry bread and eat it with honey butter or make tacos with 'em.

@MikeofWyoming It's a VERY different but the same kind of deal. Poori is thinner than fry bread. In many ways fry bread is more like naan.

you can make it to the consistency you like , with rice more liquidy and with flat bread little thicker either way tastes great
