  • I tried these cupcakes but failed somehow. They all sank in the middle when I took them out. They were still very mushy in the middle. I even cooked them for another 20 minutes or so....checking them every few minutes hoping they would rise. Can you tell me where I failed? They are not burnt..which is what I expected...just extra moist...or wet in the middle. Kagyepon@gmail.com

  • @akosuakakra Wow.. the trick is depending on the ingredients you use, less candied yams are better. Also, make sure not to open the oven the first 15 to twenty minutes. also, put them in as soon as they are mixed.. I hope this helps!

  • @lionessqueen9 That's right, I don't even know why people started using eggs in pastries.. but here is the icing recipe 1/2 cup nonhydrogenated shortening

    1/2 cup nonhydrogenated margarine, (Earth Balance)

    3 1/2 cups powdered sugar, sifted if clumpy

    1 1/2 teaspoons vanilla extract

    1/4 cup plain almond milk or any vegan creamer
