It's true though, although our climate was much more appropreate for snakes, we never had any.

They used the term to chase the snakes out of Ireland as a symbolic jesture. Snakes were always viewed as a symbol of evil, (e.g adam and eve), so it was saying patrick drove out all the evil when he converted all the people.
