since i'm more familiar with notation software, how can we add dynamics and expression on those instruments in a DAW like Cubase? sorry for asking such noob question :)
@Berrymore84 Cubase has a feature called "VST Expressions". It plays back all the dynamics you have entered in the score. But in this particular case I have mainly used the mod wheel (= change of volume layer of the VSTi = volume).
The different expressions can be achieved by using multiple instruments with different settings. Not the most convenient method but it works...
@ShortysPiano i think i heard that before from an article but not really into the details. i've always thought that mod wheels were only for pitch bending and sound panning, this is getting really interesting. i should get myself a midi controller too :)
@ShortysPiano haha did you mean you're not majoring in music? that's really cool. steinberg is good, i like German products. have you ever played any German piano?

Oh, and the main factory of Steinway (in Hamburg, Germany) is just about 2 hours away. I've been there a few times and had the pleasure to play on some of the grand pianos...
