@aznlightningboy The brains are oily and they fill in the fibers where the mucous has moved out. You can use a number of things to substitute for brains....like, neatsfoot oil and soap, or even eggs will do the job but brains work the best, I think.

Probably the latter, the fat in the rest of the animal is a different kind and already attached to the meat, so it would make sense to use the brains on the rawhide and leave the body fat for eating.

There is tannin in the brain. You can't just use animal fat because it does not do the same thing. It changes the very outside of the hide chemically. Oddly enough, there is usually enough brain in each animal to do its own hide.
