They didn't, Gabry left the group in 2005 then Maury, who is the keyboardist and backing singer, and Jeffrey who is the lead singer left Blissco shortly thereafter and then they had to change into Bloom 06 beause the name Eiffel 65 is the property of Blissco.

Eiffel 65 didn't technically split up. Gabry who was the DJ left the group in 2005 to focus on his solo career. The remaining two left blissco partially because bliscco found the group's new sound to be too dark. But they changed their name because the name Eiffel 65 is the property of blissco.

Its like I heard someone said they went from feet to heart. Its not a bad change, they still have some big beat songs. They're just less dance oriented... Their new songs have still been hits, just haven't swept the US like Eiffel did.
