  • Thanks. The bottom tier looked off center bec of the positioning of the flowers on the left side... it did look like it was more on the left... but the cake was really on the center. i gotta be more careful next time.

I'm asking because my sister is getting married and she asked me to make her wedding cake. I've never made a fondant covered wedding cake before. I've done it on cupcakes.   • Thanks--- Once fondant is applied on the cake, it cannot be put back in the fridge again--until after the event for the leftovers. And the icing in room temp is ok for up to two days ( well the one i use is swiss meringue buttercream and that is good for two days ) but refrigerated , it's good for ten days. so for me , i make the cake two days ahead of the event, even three days is ok-- bec u need to crumb coat etc, but once fondant is on there...the time should not exceed two days

  • thank you :) there will be two major tasks in making the cake-- one-the cake itself, two -- the decor in the outside. if you want to concentrate first in working with fondant, you can use box cakes for the mean time. i took that route... then later on, i started making cakes from scratch. for fondant tricks and stuff... wilton has a good book and all craft stores have that. if you want to try kid's cakes -- debbie brown's book is excellent ! (all of them actually)

  • How do you transport your cakes?

  • i cling wrap the cake first then put in in a box. if it's too big for the box , it is entirely wrapped with cling film/wrap and i put it in the base (floor) of my van when traveling. I have sworn NEVER to transport a cake alone , and someone should be near the cake to guide it during turns.

  • Oh my gosh that is amazing! I'm gonna make my first wedding cake with fondant soon and I'm super nervous! haha. My plan is to use a strawberry buttercream but I'm afraid that it might discolor the (white) fondant. I'm still looking for a really good cake recipe just the standard vanilla flavored type as well so if you have any suggestions it would be super appreciated. Congratulations on an exquisite job!

  • i havent tried using strawberry buttercream yet-- but i have used darker colored icing and then put on white fondant on top of it and no color bleeds out. for the recipes--seriouscakes has videos showing the recipes... you may want to check those out :)

  • i usually use store bought fondant and there are many brands you can choose from. it will all be a matter of preference really, some will like what you dont like and vice versa... what i can recall is that the most widely available store fondant--really does not taste good. so why not check other websites and try bakels or satin ice brand or choco pan.

  • very very very carefully !!! haha! I wrapped it in clingwrap and put it in a box but the box was not big enough..so in the car, it stayed in the box but when it was time to take it out, we just had to take the cake out with the clingwrap on it. it felt like it weighed a ton even though it was not that big. fondant really weighs the cake down.

  • you are so sweet :) there is absolutely no reason why you cant be better than me ...you just have to want it enough . i dont consider myself good at what i do.. i always want to be in the 'progressing' stage... so that every new work should be a challenge for me. and i know you can do it -- just give it a shot. i honestly believe that the will to learn this is more than half the battle. :) keep me posted ok !

  • Really nice. I love the flowers. I haven't used a lot of gum paste. It does dry quicker than fondant but they are really, really hard. I haven't had the opportunity to do a wedding cake yet. It is such an important cake I hope someone will trust me to do theirs one day! I know they loved it.

  • hi. i'd say 90% --- all from here on youtube...10% on books i bought from ebay. for demos, i watch the youtube videos over and over again! and then for the recipes i go online and find one that suits my taste... i also look for good recipes and designs in books.

I've made one cake using marshmallow fondant so far and it only makes me want to make more. Do you have a dowel going through the whole cake to support it? How do you transport such a huge cake?

  • thank u. there are lots of dowels in this cake. if you can find the video from epicuriousdotcom on how to assemble a wedding cake, that is pretty much how i did it. and to transport a cake like this--- i do it VERY CAREFULLY. haha... someone must be at the cake's side at all times. i did not have a box big enough so i clingwrapped it all over.

  • This cake along with the story about the couple you made the cake for is very inspiring. I cannot belive you are new to making wedding cakes, this look like an expert cake. I have just starting using fondant and gumpaste, what is the secret to getting such nice flowers and pretty colors. Could you explain in details how you put all the decorations on the cake. I would really appreciate your help. What is the name of the fondant you use and do you use a machine to get it thin? Thanks

  • Hello sorry it took a while to respond. the flowers are gumpaste and should be rolled as thin as you can and the colors are enhanced by petal or luster dust. for this type , you can either roll the fondant or use a craft /pasta machine to roll it out thin. the fondant i use is satin ice.

  • What a beautiful cake!! That story touched me. That is so nice of them to give you a kitchen aid mixer. I have a couple of questions for you because I am a bit of a novice too!! Lol! How did you make those pretty petunia's? Is there a special cutter for that? How did you get them and the leaves to stick to the sides of the cake? How did you get that diamond imprint on the sides of the cake? And how did you dowel a 4 tier cake in the middle? Any help you could give me I would really appreciate:)

    To answer your questions:

    - the flowers were made using a petunia cutter and veiner set.after the flower gets pressed into the veiner, i used a flower wire with my premade stamen & pistil centers--and i threaded that through the flower and i had it hang upside down to dry.

Id apply to Ace of cakes even if means being the sweeper lady haha... just to bask in the talent of these people will be enough for me...and i'll cross my fingers hoping some of it would rub off me lol. I use a LOT of fondant! I buy the 20 lb since it becomes a huge value cost-wise compared to buying small tubs.( even if i dont use it all up, it's good for a year anyway-- i usually use 5-8 lbs) i buy small tubs in emergencies though.

  • Thanks :) It was pricelss to see the bride's face light up when she saw it. And it was hilarious when they did not want to cut the cake --during the 'cake cutting' part since they did not want to 'destroy' it :)

  • So im pretty new to the whole fondant thing and i was wondering if you have to use a frostin under the actual fondant itself and if so what kind?

  • Hi. There are a couple of ways used to make the fondant stick to the cake...one is to use a glaze (like apricot glaze)--which i havent tried before, and the second way is to use frosting or icing. For #2 it is like having a completed cake and then 'wrapping' it in fondant :) I have used vanilla and chocolate buttercream for most of the stuff i have made. hope that helps. there's a video by cookingupastory on 'fun with fondant' that shows the process.

  • my goodness! you should have called me :) are you coming back here anytime soon? anyway-- i buy the fondant sometimes, and in emergency cases, i make it. Store bought fondant has a more uniform texture-- more predictable... homemade fondant is much cheaper, much sweeter-- but has the occassional 'bumps' caused by the powdered sugar... but it still works :)

  • Thanks a lot :) The cake was made out of chocolate cake, and chocolate frosting -- the bride is a sweet tooth and i guess many of her guests were -- including me !!! Many others stay with the traditional white cakes for weddings ... but you can do whatever you want -that's where the fun is :)

  • Hey. you have some really cool cakes and stuff. I love to bake cakes and want to grow up to make them as a career. I have always had trouble with frosting, and never knew about fondant much. I think I will be testing it out soon and if I do I will try to get a picture or something to you.

  • salamat :) the wedding cake is 'all cake' and pretty much 'all edible'...except for the wires used to hold the flowers ...and the cake boards :) have you ever baked before? i can email you some tips if you want. a couple tries will definitely help you in making your dream cake ... just email me ok :)

  • I was So happy to see the bride's face when she saw the cake and gave me a HUGE grin and a bear hug :) Both the bride and groom hesitated to slice the cake when it came to the cake cutting part of the ceremony... and i found that hilarious :) i heard her say -- "do we really have to ( slice it)?" i just loved it... and knowing that they will have one more nice memory marker for their wedding is more than enough for me :)
