for poes just get your bow and arrow and for freezards just let them try and freeze you first then go over and hit them with the sword.

I really don't see why everyone thinks that Iron Knuckles are all that hard to blink. Whenever he is about to attack, backflip away, then jump attack and once again backflip immediatley out of range. Lather, rinse, repeat. The kuckles only get hard in Twilight Princess. Now those suckers are a pain in the ass to kill.
