Inertia is what keeps the dies in the cup and dies automatically stack in the cup with the proper motion

Sliding the cup across the table is just used so it will stabilize the stack of dues

A lotta people would think magnets or something, but notice he's moving the cups in eliptical patterns, not back and forth lines. This lets the dice slip up the side of the cup (towards the narrow end) rather than making them shake back and forth. With proper timing, they will bump into the die above them.

taking them off the stack is called down stacking and stacking them on top is called a point stop, and the point stop just takes a day of practice and the down stacking is just how you aim the cup at the next dice.
