How do professional bands, specifically N.E.R.D.'s, usually organise 2 drummers into the music? Do they assign one to specifically focus on groove while the other one can do sweeteners and fills on top?

They ususally get 2 really good drummers that can for the most part sync together and play the same with a few slipt fills and grooves so yeah basically, but they usually trade off and on
