That's not the same Josh Weinstein. The MST3K Josh goes by J. Elvis Weinstein because he always got confused with the Mission Hill Josh. And Mission Hill wasn't made for Adult Swim, it was made for the WB back in the late 90's early 2000's.

Thats the Josh Weinstein from The Simpsons who co-created Mission Hill with Bill Oakley, not the one from MST3K, and Adult Swim didn't cancel Mission Hill because it wasn't made for them. Mission Hill was originally on the WB close to ten years ago. Adult Swim just resurrected it in reruns. If anything they should be given credit for giving a great canceled show a second life. They also did the same with the inferior, but still funny WB show "The Oblongs".
