  • @utopia320 it's called Sujihiki- a more universal slicing knife as opposed to the Japanese Yanagiba that most sushis chefs would utilise :)

  • What type of knife is he using? It doesn't look like your typical Japanese chef's/santoku knife. . .

    I'm not an expert, but ill bet you it's a tuna. You can see from the sharp tail.

  • @franky2x4 More specifically, it's called bonito and it's a very close cousin of the skipjack tuna. In the US, depending on where it's caught, it can also be called the Pacific or Atlantic Bonito.

    Similar color and texture to the tuna (bluefin, yellowfin, big eye) that you see in sushi restaurants, the meat is a little more oily, like that of a mackerel.
