@franky2x4 More specifically, it's called bonito and it's a very close cousin of the skipjack tuna. In the US, depending on where it's caught, it can also be called the Pacific or Atlantic Bonito.
Similar color and texture to the tuna (bluefin, yellowfin, big eye) that you see in sushi restaurants, the meat is a little more oily, like that of a mackerel.
@utopia320 it's called Sujihiki- a more universal slicing knife as opposed to the Japanese Yanagiba that most sushis chefs would utilise :)
