Alton's chocolate mousse recipe is needlessly complex. When I make chocolate mousse I melt chocolate in hot cream, whip egg whites for at least five minutes. I fold the egg whites into the chocolate when it's cooled and allow it to set in the fridge. If you get the egg whites stiff enough it comes out perfect every time.
I love Good Eats & always watch it for the story and the history. Alton is a lot about the components of food and I know of no other food show like that anywhere.
@davecardenas He's also really, really picky. And he likes to use recipes that have the least chance of failing. He's really less of a cook and more of a recipe maker. Heck, the food on the show isn't actually cooked by him, other than what you see him do on air.

You're right about the recipe maker because he takes a recipe as far apart as it will go even down to chemistry and the like. It's kind of what I like about the show. It doesn't mean I would want to eat some of the stuff he's cooking.

(Spelled wrong I'm sure lol). This includes toothpaste, certain candies, and gelatin. I wasn't sure about it being semen or just bone marrow so was looking for clarifications. Not insults please thank you. :)
@asialeah07 I've heard gelatin is made from a horse's or cow's hooves, and one more humane source is the horns shed naturally from certain animals (but it's not like any gelatin manufacturer labels where they got the stuff for their gelatin anyway, so just assume it was a horse's or cow's hooves). You can also assume that the animals that are harvested for gelatin aren't killed in the proper way Muslims go by when they slaughter their animals.
@MissReige gelatin can come from many places, such as animal bones. Its the reason why bbq food is so good; the collagen dissolves and forms gelatin. See the episode of "q" for more info.

Maltese Muffin is a reference to the movie title "The Maltese Falcon" most of the episode titles are plays on famous titles, and many of the recipe names. I.E. The art of darkness = the Heart of Darkness, the book that Apocalypse Now is based on.
Wow never thought I would see someone else use a vanilla ice cream+espresso recipe, thought only I was that lazy! Works great with cinnammon and also brown sugar, too!
