this happened to me too.. When i had an iPhone 3G ... but now i got an iPhone 3GS AND IT WORKS 100% FINE 0 LAG ! with jailbreak , 100 applications installed ,32 GB memory , Cydia & installous installed :P Buy an iPhone 3GS !
Change the amount of apps per page to about 8 per page then got to ur settings then got to general and spotlight search then untick the boxes. Also delete the apps that u don't use and ones that u think are laggy. Keep a lot of space in ur iPhone.
I just downgrade mine from 4.2.1 down to 3.1.3 and you should see the amazing difference in speed! Fast as when it was brand new! I can help you on how to perform the downgrade, after that i am jailbreaking the iphone with "jailbreakme doot com easy!!
I don't know if you fixed your problem but mine is doing the same thing. The best thing is to downgrade it back to 3.1.3... HOW? well you need the iOS 3.1.3 file and a program called iREB. If you only restore using shift and "restore" at the end itunes cancels the update so before doing that run iREB program which "fools" itunes and lets you complete the downgrade :)
It's not your memory,all of the apple updates after ios4 are designed for a faster phone therefor get the 3GS or iPhone 4, or downgrade to 3.what ever, but this may help to, go to settings general spotlight and untick everything, that helps... Hope I helped :)
im not sure what your prob is. check your memory and its its nearly full delete some music , movies or games , thats what happens to mine wen it goes slow :P

If you are jailbroken, disable multitasking with a cydia tweak, like MyOS.
