That was my doubt too until some days ago. On pc version, you have to press simultaneously the run and taunt button (default is Shift+x)

@amygardenwainman Then, I think it's R3 button (press the right analog stick). On the Xbox 360, Wesker dashes this way, so, you can try on your ps3, since there are similar aspects on both in-game settings ;)
