Rhodesian Ridgeback Play - How to keep a big dog down!

I see the same with my two ridgies: lots of bunny-hops, mostly small and backwards or sideways. They're brilliant at ducking and dodging, as they would have to be in the job for which they were bred! Sometimes I have even seen one dog jump sideways over the back of another (see attached video).
