oh for God's sake...this is the LOCAL convention version of this presentation; I went on to do it in a big panel at Anime Boston; for some idiotic reason the original version ranks higher in Youtube searches. I should really add a link explaining this, I like the other version more.

I am sorry, I fully answer these questions in panel #2, but I haven't loaded that video yet:

1-supplementary materials flat-out state what Angels are

2-even within this panel I say "The Japanese title is "ShinSeki Evangelion", the "Genesis" part was wordplay

3-I cover this more in the next panel, but the creators have openly admitted that the biblical symbology meant absolutely nothing and they wouldn't have done it if they knew westerners would watch it

@ReVolutionOfEva Yeah it is true. They never thought that the series was going to be a success and it was going to be broadcasted anywhere else but Japan. They even had economical while transmitting the series. however, the outcome was different.
