For me, Ciel's return had more to do with the tea, based on the conversation (blatant foreshadowing xD) that Sebastian and Alois had in the basement in the first episode. And as you'll find out later, there was something of a "technicality" in which Ciel's could not be consumed in episode 12 of the last series. As for the ring, Sebastian put that back on his finger signifying that he would live and once again be the current Earl Phantomhive.
