If you are really interested in fresh fish, then why don't you cut off the head of the fish before cutting it? it takes a second, and would prevent pain to the fish since its head is already severed..
As I mentioned in my previous comment, eel is killed by first strike of needle to his head. Otherwise, we can not process fish smoothly like that way. (Fish is so strong and powerful.) Rest of the move of the eel is just a reflection of nerve, exactly the same as headless chicken is running around.
Anyhow, we do/can not process fish alive. If you doubt me, just try it, you will know how strong they are.

@AnnaramaTV several studies show eels do not feel pain. sorry, but you aren't correct. they have a chemical in them called delishugins that "activate" when they are essentially "chosen" for food. this chemical in turn blocks pain receptors and they lay back and accept their fate as evident in the video.

I believe this is anago(Conger myriaster), close to eel, but different species. The raw blood of eel is poisonous and sushi bars(usually) don't handle live eels. (Well, according to Wikipedia, raw anago also contains the same toxic protein as eel, but much less in quantity).

hey! some of have gone fishing at some point in their lives. i always kill freshwater fish i catch. a hammer to the skull to kill or at least stun, the a knife through the same point on the skull as this fish. we all have some instincts to know how to butcher something even with every field dressing a deer.

I adore sushi, it the most delicious food I have ever had. However I do think that the whaling needs to stop. I'm not attacking japanese history or culture, just saying that it is always a tragedy for a species to be endangered and even possibly made extinct due to our exploitation. @BizenKiyomitsu I love your country, love your food, love your culture, the whaling still needs to stop. My point is comprehensive, sustainable and maximum utilization of ocean resources. We are not happy to kill whales. And we are not saying let us kill them freely. It is completely out of our argument.
We are saying, whales are increasing and they are catching fish 2~3 times more than human. We must think balance of resource allocation.

My mother could have whale meat once a month after WW2. I could have whale meat at school lunch once a week. I could have beef steak once a month or so. For my generation beef steak was a food of dream.

You should know whale and Japanese. We have history of whale chatching for more than 2000 years. But it was coast whaling only. As I mentioned, we did ocean whaling 1950~1980, based on recommendation of US.
International protection of whales was started 1937. We were only doing coast whaling in this days. Then, you will know who endangered whales.
