To ask for water, say お水下さい（おみずください） or お水お願いします（おみずおねがいします）or お水頂戴（おみずちょうだい）. Any of these will work. The last one is a bit less polite/more informal so at a restaurant I'd go with one of the first two. The お in front of 水 is the honorific お
