  • @critesbill Yes is SOUNDS like he's hacking, but if you watch closely you see his blade doing the proper back and fourth motion most of the time, also indiscriminant is absolutely false, you'll notice that his pieces are relatively the same size, with 'indiscriminant hacking' there would be HUGE variation in sizes, his minor variations are nothing that will be noticed in the final product of a stew. The precision in which he does this can be defined as nothing short of skill.

  • i rarely use this word, because it's about as offensive as it gets in a kitchen, but this guy is an absolute fucking hack. It's a disgrace to have the word SKILLS in the title of this video. Fast, yes... Skills, no.

    Please don't disagree with me here... even if you know nothing about cooking, or knife work, anyone should be able to watch this and realize that 90 percent of the time he is indiscriminately HACKING away at a pile of food. That is the opposite of skill or technique.

  • @critesbill Yes he absolutely is just hacking away at the food here, but as you saw in the video, he was making a stew, where the size of the cut, or even what type of cut you put on the veg is completely irrelevant. Im sure he would be able to do things well if he slowed down a bit and tried to do things correctly

    Respect that. These are not intricately carved pieces. This is a lot of dicing and chopping, repeated. And repeated well. Not an amateur at all, very experienced cuts of similar type and size.

  • I'm a first semester culinary student, and I've been trying to stay away from chopping so... "hard" to avoid hurting my knives. Does it really mess up the blade or is it actually okay to chop to hard like you see most chef's do on TV or online?

  • number of cuts obtained while perfecting knife skills can be reduced if you lay the objects always on their flat side. its very unlikely that one would be able to hold a thin peace of vegetable upright just with fingertips every time like this.

    Just start with sweating off 2 parts onion, one part carrot, and one part celery. Cut howerver you like, perferefabley not to big and around the same size. Add some fine chopped garlic to that add cook er of with some nice olive oil and butter. then u can add whatever u want just make sure your broth/stock/base is seasoned well weather its made from scratch or not! dont be affraid of the salt and pepper!!!

    Crazy thick callouses for sure. fingers so used to heat and can with stand some boiling water, oil, oven burns, that dont blister or anything andyes for fun. i was on about my 6th beer when we filmed this at 88 person staff housing for a golf course
