I love mango salsa and I have found that if they are too soft or too ripe, they are too mushy to chop. you're looked to be the perfect consistency of ripeness.
That looks good, and very simple. The only hard part will be finding a fresh mango. We have a Philippino store that sells exotic foods. Maybe they'll have mango.
A really well done episode, brian. Oh, and when you slammed your knife into the ends of the onions I was like "OMG how does he do it?!" This really was one of my favorites!

It is simple to make, yes you can sometimes find similar relishes at nice upscale markets.
