I love parsnips! Parsnip and carrot mash is fantastic and any leftover fried with an egg is delicious for breakfast. Roast parsnips are yummy and spiced parsnip and apple soup is a wonderful winter warmer. Many thanks Guy for your lovely organic veg and hurrah for parsnips. Ooh yes and I got two lovely beetroot in my veg box today - I can't wait to cook and eat these!
