I hate this guys methods, they are pointless and waste of time, just like at 1:09 it doesnt matter what way you put the bloody flour in, if u get to much then scrap it off the top with a knife. Best way to put the eggs in is just to put all the eggs into something like a glass and lightly beat the, them put it in bit by bit while u use a electric beater. instead of calling it pate de choux... call it choux pastry. they way id pay this guy to teach me..
@Gauzl - It does matter how you put the flour in the cup- by using the measuring cup as a scoop, you pack in the flour too tightly, getting more flour inside the cup than what a proper 1 cup measurement is---- (student at Le Cordon Bleu)
@egnantes Its fahrenheit, if it were 400 degrees Celsius, it would be VERY hot. Also, as a frequent baker in the US, most sweets bake at about 350-400 degrees fahrenheit.
In some recipes it won't matter if you just dip into the flour but with something that hinges on moisture and texture it does. I use to do the same and then started doing svoop and sweep it does make a differece.
