Sometimes it takes a few hours for the "watch in high quality" option to become available, as YouTube computers determine if your video is good enough for high quality viewing.
You probably already know this, but you can set your browser to always play "high quality" (if available) in your YouTube account settings.
I've found that there are two formats that they favor. WMV and MPG. I save my videos (which I'm certain you would find completely uninteresting, as most of my videos are focused toward Ohio State Buckeye fans) as 640x480 1meg/second WMV files, and they always get upgraded to high quality. I don't know if you have that option on a Mac, but a similar 1meg/sec MPG should work too.
As an experiment, I'll upload a recent video again as an MPG and see what happens.
Yes, it's a complex algorythm that automatically determines if your content sucks so badly that it isn't worth "high quality" bandwidth. ;) Just kidding...

To answer your question, since the higher quality version of your video takes longer for YouTube to process, it doesn't appear right away.
