He's absolutely correct. I mean I've been to many restaurants, and you wouldn't believe the number of people that order pork belly and complain about there being too much fat on the pork belly. smh
@Nate70 Indeed. A MICHELIN STAR chef (Forgione) makes the pasta too think and under-cooks it. Less acceptable than the texture of lardo. As Tsai said "Oh, it's too fatty" Uh, HELLO IT'S FAT....However, fat in the soup, mushrooms sauted in fat, drizzled with fat, isn't too much. That makes sense.

its not just that symon understood what he was trying to do, he was raised in cleveland. watch his clip about periogi. he was raised on eastern european food, so he isn't afraid of the fat. his taste buds were acclaimated to like it. every judge comes from their own culture. btw, w/ the obesity epidemic, you still don't see a lot of fat polish americans. stocky yes, but not fat. eat good and get off your butt.
@ajlee35 Yea, that was all about the health food craze. Eating fat doesn't make you fat, eating carbohydrate rich foods makes you fat. As well as being lazy. There's an "obesity" epidemic, and the numbers keep growing. They they try to blame it on fat. But as I said it's the carbohydrates pumping more blood sugar into the body and causing insulin surge which provokes the body into storing extra calories as fat instead of burning it. That's why I believe Tsai lost. Blame the health craze.
Chef Tsai should have won. Of course using lard would only appeal to Symon who understood what Chef Tsai was doing and knows to pull something like that off takes a true chef. The other judges - eww this isn't fashionable. We want Waygu, steak, mushroom, lobster, caviar. The winner couldn't even cook ravioli. WTF. Fashion does not equate to technique or difficulty.

I was hoping that his loss would take him down a peg or two...aparently not. Although I loved his East meets West show and his cooking overall...I was annoyed because he really looked like a selfish a** on the show. If nothing else his attitude is not in keeping with the American version of Iron Chef. Only Moriomoto is allowed to act superior since he's a throwback from the Japanese version...the other Iron Chefs are down to earth and the new Iron Chef is too. I am glad he won.
I've been to a lot of book signings and cooking classes of famous chefs and Ming is by far the nicest chef I've ever met. This video shows how great a guy he is. It was a mistake not choosing Ming. I feel the judges were kind of against him because he was famous coming into the competition. Who cares anyway? He's the best ever. I hope to get to Boston sometime and eat at his restaurant. He rocks.

not drunk, just finished w/ cooking demo and enjoying the audience. been wondering if ming's decision to showcase fat was a cultural faux pas. i wd have shared arpaio's reax, but know that some cultures adore the taste/texture of bites of pure fat.
wow the show made him out to be mean and pissed off alot. here he is pretty cool
