  • I usually make my own fine sugar, just the same way Alton does--because it's cheaper than buying! But I haven't had a blender for months; it's just not in my budget. Oh, I miss my blender. (sighs)

  • @14lanicup I use egg yolks to make ice cream in the summer. I take the saved whites and make angel food for the winter. Eggs are gooooood for all that seasonal goodness. :P

  • to karomanah any pan will work, and as for cream of tartar u can use same amount of lemon juice, thats what i use

  • It's not tartar cream, its cream of tartar. Try looking for that instead. It's usually sold with the spices or baking section of the store.

  • As long as the batter can climb it, shape doesn;t matter.. but it needs the tube in the middle to climb. as for cream of tartar you don't HAVE to use it, you just have to be careful when beating your foam.

  • So true! I live in Italy where metal bowls are hard to come by (thank goodness for IKEA). My roommates eat their salads straight out of the plastic mixing bowls all the time and you can never seem to get rid of that layer of oil. Blech!

  • I am a Harvard biologist.  The amount that Alton understands the science stuff with this is--better than a lot of researchers I have worked with.... He's so brilliant ^_^

  • @Jodabomb24 If by "fed that stuff" you mean AB's read "On Food And Cooking" by Harold McGee and maintains a friendship with Shirley O. Corriher, that yeah, he's "fed that stuff". AB is pretty typical as true food geeks go...which is why he's our god :)
