Well, it's really simple when you think about it.

The average paladin at lvl 70 (ungeared) has about 8000hp. (give or take a few hundred.)

At Lvl 70, the average Death Knight (ungeared) has between 10k and 11k health.

Plus, with skills that prevent casting of whole talent trees, and a silence effect that does damage when it drops and Rune strike which does 200% of weapon damage and tends to crit at 5k... trust me they're delaying the inevitable.
