  • List of ingredients as seen here: 2 teaspoons oil,1 clove of minced garlic, couple slices of minced ginger, small amount of chicken broth, 2 teaspoons hoisin sauce, chili garlic sauce 1/4-3/4 or more teaspoons, red bell pepper, green bell pepper, 1/2 onion, 1 celery stalk, 1 mushroom, for chicken breast marinade: oyster sauce

    for beef marinade: cornstarch, soy sauce

  • Searing meat does NOT seal in the juices. That's a myth.

  • @theblasto It depends what you mean by "seal in the juices." Are the juices in the center more protected by a sear on the outside, even though that sear also removes juices from the outside?

  • @kiminokami All I am saying, is that the crust on the outside of a piece of meat from searing, does not protect the moisture on the inside better than non-searing methods.

    Looking up "searing" in wikipedia. They explain it all there.

  • this is an EXCELLENT tutorial for learning the basics of chinese stir-frying in a wok from a true master, Martin Yan. Anyone who wants to learn how to stir-fry should watch this first.

  • Yan asks a person to sample his cooking. He then grabs a meat cleaver. The crowd begins to laugh. He shows it to the guy tasting the food.

    "Tell me," Yan says, testing the blade's sharpness with his thumb, "whether you like it or not...."

    The taster enthusiastically waves his hand in the air signaling the "okay" sign.

    Yan grins as he tells the audience: "He said, 'Oh, you're perfect...it is sooo perfect, it is...' -- Again, speechless." Yan turns away in triumphant.

    Brilliant!

  • There should be retro cooking shows on The Food Network. We have the other show called WOK WITH YAN (Stephen Yan) on an independent Toronto channel.
